I led a complete operational rebuild of Village Windmill Bakery in Erbil, Iraq, two years after its initial launch, with the objective of restoring product quality, improving performance, and restructuring the entire bakery operation, mainly to transfer the know-how monopolism from chefs to the owners. The project involved rebuilding all bread products from scratch, introducing new recipes, standardizing processes, and improving production workflows with existing machinery. In parallel, I conducted a full staff evaluation, followed by recruitment and hands-on training to ensure the team could consistently deliver high-quality results. The production focused on a wide range of Lebanese and European fresh bakery items, with an emphasis on consistency, efficiency, and product excellence. With a total investment of $3.5 million and a focused execution period of 6 months, the project successfully transformed the bakery into a well-structured, high-performing operation. This project highlights my expertise in turnaround and restructuring, helping existing bakeries recover, improve, and reach their full potential through technical precision and team development.
